Cookery Module IV
An immersive, creative and technical course for those who wish to master the art of plating.
Based on principles of design, visual composition and creative thinking, this masterclass takes participants on a comprehensive journey – from theory to practice – with professional guidance from a chef specialising in fine dining.
It will be a unique opportunity to explore, manipulate and present food in a visually striking and functional way. The programme includes technical demonstrations, drawing exercises, dish planning and creative staging, culminating in a final photo shoot.
About the chef:
Chef Rui Mota is a multidisciplinary culinary creator who focuses on culinary innovation, sustainability and sensory experiences. With over 12 years’ experience, he specialises in alternative cuisines, contemporary mixology and functional pastry.
He works as a trainer at institutions such as the Estoril School of Hospitality and Tourism and the Faculty of Food Sciences at the University of Porto. He collaborates with brands such as Rum Diplomático, Cigala, the European Commission and Sogrape on training, show cooking and product development projects.
A recipient of awards from the National Exhibition of Young Creators and the University of Lisbon, Rui combines rigorous technique with creativity, promoting immersive, ethical gastronomic experiences with a distinct identity.
