Traditional Portuguese sweets workshop by chef Gilberto Costa
This workshop, led by pastry chef Gilberto Costa, has the general aim of enabling trainees to identify and systematise the specific characteristics of Portuguese gastronomy, as well as its appreciation, understanding it as part of their cultural heritage. ย The chef will teach the technical basics that will enable participants to prepare the proposed traditional sweets recipes, including Queijinhos de ovos, Bolo mimoso, Bolo sem rival, Bolo bom como tรฃo bom, Pรฃo de rala, Doce de vinagre and Cornucรณpias.
Specific Objectives:
- Culinary Skills: To develop skills in preparing dishes, respecting techniques and practices in food production, emphasising the importance of using local ingredients.
- Sensory Awareness: Refine the palate and sensory appreciation by identifying flavours, textures and aromas characteristic of Portuguese cuisine.
- Developing presentation skills: Exploring presentation strategies for typical Portuguese dishes and understanding the economic potential of local gastronomy.
About the chef:
Gilberto Costa specialises in Hotel and Restaurant Management at the Estoril School of Hospitality and Tourism (ESHTE). He has a solid academic track record, having obtained his degree in Food Production in Catering in 2006 and his Master's in Food Safety and Quality in Catering in 2011. In Paris and Belgium he gained a new perspective on culinary creation. With a career dedicated to training, he teaches the Food Production course at the Estoril School of Hospitality and Tourism.ย
His dedication to teaching is complemented by his passion for writing. In addition to four acclaimed books, Gilberto is also the author of several scientific and technical articles, including โAlgas ร Portuguesaโ (2023) and โAmor em Fatiasโ (2019), reflecting his commitment to the dissemination of gastronomic knowledge and his passion for writing and contributing to the advancement of knowledge in the area of Hospitality and Catering.
As an author, educator and researcher, Gilberto constantly seeks ways to promote growth and excellence in the gastronomic industry, sharing his passion for cookery and his vast knowledge with students, professionals and enthusiasts in the field.
