Game Meat Workshop with Chef Carlos Matos
Cooking game is far simpler than it looks, and you certainly don't need to be a hunter to do it well.
In this hands-on morning workshop, chef Carlos Matos works with venison, partridge and wood pigeon, moving from traditional Portuguese recipes to modern techniques. Along the way, he covers the legal and ethical side of cooking game and shows how to make the most of every part of the animal. The idea is simple: get to know the animal, respect the produce and bring out the best in each cut.
The workshop takes place at Cascais Food Lab, the municipal food hub inside Mercado da Vila, the town's covered market. Recipes, lunch and a certificate of attendance are included.
